Water supplies
In hot climes, often the most vulnerable part of a fortress is its water supply. Most depend on wells but those can run dry. After days spent in front of [fortress name], you've caught glimpses of the defenders slipping into the hills. You explore where they've gone, and eventually you come across a rudimentary cistern. You suspect that they must be refreshing their water here.
